This is a traditional Assyrian and middle eastern recipe. There are many variations to Kleecha cookies but the most important part is the spices! The amounts below can be half, doubled or tripled up for various shapes Kleecha Ingredients: 6 cups all purpose flour 4 cups Simolina 4 cups sugar 3 cups butter, melted 1/4 cup Crisco 1/4 cup canola or vegetable oil 6 egg whites 1 cup warm milk 1 teaspoon yeast Spices: 1/2 tbls ground cinnamon 1/2 tbls ground anise 1/2 tbls ground cardamom 1/2 tbls ground fennel 1/4 tbls ground cloves 1 tbls nigella seeds 1 tbls mahlab 1 whole nutmeg grounded Pinch of salt 6 egg yolks with 1tsp vanilla to brush top of cookies. Direction: Add a tesp of yeast to a courter cup of warm milk with 1 tesp sugar, cover let stand for 10 mittens to activate. Combine all dry ingredients together, add to that butter Crisco and oil and mix everything together very well with mixture or rub it with your hands. Then add egg whites mix well. Add yeast to that and the rest of milk, Knead the dough and add more milk if needed. It depends on the flour absorbtion of liquids. Place in a large bowl, cover, and let it rest in a warm place for at least two hour, or more.(I left mine for 6 hours) Preheat oven to 350 degrees F. Have your baking pans ready aside. Roll a piece of dough on a cutting board.. Cut 1-inch wide, and arrange in the pan. Brush top with egg yolks wash, and bake for 25 to 30 minutes. Put the cookies on cooling rack. Let them completely cool then Store them in a cookie container.
