
Today I’m making one of my favourite quinoa salad recipe that is perfect for lunch, dinner or side dish! I hope you will give this recipe a try! Be sure to subscribe if you haven’t. 👍 Quinoa kale salad RECIPE: 2 cups kale, finally chopped 2 cup quinoa, cooked 1 cup corn 2 carrots, shredded 2 tomatoes, diced 1 red bell pepper, finally chopped 1 apple, finally chopped I bunch green onions 1 cup pomegranate (optional) Dressing: 1/2 cup olive oil 1 lemon, juiced 1 tbsp cumin 1 tbsp salt or to taste (If you're not a fan of any these ingredients, you can take them out or substitute them for something else) Direction: In a large bowl toss all the ingredients together mix it very well and let it sit for a few minutes then serve it alone or with meal, leftovers can last in fridge for up to 3 days. Enjoy!
